Оцінка ризиків алергенів при виробництві мюслі

Abstract

Досліджено ступінь ризиків алергенів та проведено їх загальну оцінку на підприємстві за бальною системою. Встановлено, що організація може ухвалити рішення про першочергове впровадження системи в рамках одного або декількох підрозділів для того, щоб зосередити зусилля і набути додаткового досвіду в рамках виконання такого пілотного проекту. При цьому, процедури і документи рівня організації повинні розроблятися і вводитися в дію відразу ж для всієї організації. У подальшому необхідно у структурі системи визначити послідовність етапів, хоча певна гнучкість в порядку розробки різних елементів системи все ж таки можлива.

The degree of allergen risks was studied and their general assessment at the enterprise according to the scoring system was carried out. It is established that the organization may decide to prioritize the implementation of the system within one or more units in order to focus efforts and gain additional experience in the implementation of such a pilot project. In this case, procedures and documents at the organization level should be developed and implemented immediately for the entire organization. In the future, it is necessary to determine the sequence of stages in the structure of the system, although some flexibility in the order of development of various elements of the system is still possible.
