Дослідження впливу гідротермічної обробки на технологічні властивості зерна

Abstract

Представлено дослідження технологічного процесу гідротермічної обробки зерна, що використовується на переробних підприємствах України. Встановлено, що при організації і веденні гідротермічної обробки важливе значення має вибір таких параметрів технологічного процесу як: вологість зерна перед подрібненням, температура і тривалість обробки, а при виробництві круп також тиск і температура пари. Запропановано раціональну схему гідротермічної обробки зерна, що підвищує ефективність процесу розмелу.

The study of the technological process of hydrothermal processing of grain, which is used at processing enterprises of Ukraine, is presented. It has been established that when organizing and conducting hydrothermal processing, the choice of such parameters of the technological process as: grain moisture before grinding, temperature and duration of processing, and in the production of cereals, also the pressure and temperature of the steam, are of great importance. A rational scheme of hydrothermal treatment of grain is proposed, which increases the efficiency of the grinding process.
