Abstract

В роботі на основі аналізу статистичних даних обґрунтована роль та значення підприємств ресторанного бізнесу як одного з перспективних напрямків підприємницької діяльності. Визначена актуальність питання забезпечення економічної безпеки в умовах мінливого та ризикового зовнішнього середовища. Узагальнені основні завдання, визначені об'єкти системи забезпечення економічної безпеки підприємств ресторанного бізнесу. На основі системного підходу визначені місце та роль моніторингу та аналізу господарської діяльності в системі забезпечення економічної безпеки підприємств ресторанного бізнесу. Узагальнені принципи моніт орингу та аналізу господарської діяльності для забезпечення економічної безпеки підприємств, а також методи та прийоми. Обґрунтована актуальність практичного використання матричної моделі для розширення аналітичного інструментарію моніторингу та аналізу діяльності підприємств ресторанного бізнесу.
