Abstract: | У статті охарактеризовано економічні аспекти існуючих трендів індустрії гостинності в контексті продовольчої безпеки. Досліджено особливості та вплив на продовольчу безпеку країни таких трендів індустрії гостинності як: перехід до більш стійких моделей управління ресурсами; розвиток економіки замкненого циклу; застосування новітніх технологій. Розкрито зв’язок економічного аспекту продовольчої безпеки зі зміною поведінки споживачів, небайдужих до питань збереження навколишнього середовища і все більше звертаючих увагу на походження продуктів, екологічну відповідальність підприємств і дотримання стандартів якості. Зазначено, що хоча індустрія гостинності стикається з численними викликами, але водночас вона відкриває і нові можливості для розвитку. Наведено перспективні напрями розвитку економічних стратегій підприємств індустрії гостинності в контексті продовольчої безпеки. Global economic challenges and threats to food security are affecting the hospitality industry today. Climate change, disruptions in international supply chains, and fluctuations in food prices are affecting the way hospitality companies operate, forcing them to adapt to new conditions, integrate the principles of sustainable development, optimize the use of available resources, and ensure the stability of product supply and quality. After all, the economic stability of the companies in the industry depends on it. The economic aspects of trends in the hospitality industry and their impact on the country's food security have been studied. The transition to more sustainable resource management models, the development of a closed-loop economy and the use of the latest technologies open up new opportunities for the development of hotel, restaurant and tourism businesses. The connection between the economic aspect of food security and the changing behavior of consumers who care about the environment is revealed. Prospective directions for the development of economic strategies of catering enterprises in the context of food safety are presented. Purpose. The purpose of the article is to characterize the economic aspects of the existing trends of the catering industry in connection with food security in the world, to identify peculiarities in this area and to develop proposals for directions of further development of economic strategies of the enterprises of the catering industry in connection with food security. Results. The hospitality industry will develop in the coming years, combining innovation, sustainable resource management and adaptation to the economic challenges of food security. A review of the economic aspects of hospitality industry trends in the context of food security revealed the complexity and interdependence of global and local processes affecting the sustainability of this industry. Food security was found to ensure stable access to quality food and is a key factor for the hospitality industry serving global tourism flows and domestic consumers. The expediency of economic adaptation of hospitality enterprises to the challenges of globalization, sustainable development and the growing demand for socially responsible practices is revealed. The strategies presented for adapting the hospitality industry to the challenges of food security require a systemic approach to resource management, technological innovation, and close collaboration with local suppliers to ensure the sustainability of both business and global food systems. Conclusions. Analyzing trends in the hospitality industry in the context of food security from an economic perspective reveals the complexity and interdependence of global and local processes affecting the sustainability of this industry. Food security, which defines sustainable access to quality, safe and nutritious food, has become a key driver for the hospitality industry serving global tourism flows and domestic consumers. Trends in the hospitality industry at the intersection of food security demonstrate the feasibility of economic adaptation to the challenges of globalization, sustainable development and the growing demand for socially responsible practices. Strategies to adapt the hospitality industry to food security challenges require a systemic approach to resource management, technological innovation, and close collaboration with local suppliers to ensure the sustainability of both businesses and global food systems. The above suggestions will not only increase the efficiency of the hotel, restaurant and tourism business, but will also make a significant contribution to global food security. |
